26 May 2010 – Leftover chicken with peaches and raspberry jam; corn; cole slaw

I’m relieved that Mom is willing just to serve leftovers! She changes to a different veggie, though.

This corn we both agreed was not as good as the kind she usually gets (this was some store brand, canned). I prefer canned corn to frozen b/c the frozen is typically tough and tasteless, but this canned brand tasted like frozen to me.

Also, Mom served the chicken over egg noodles, which, I discovered, are called for in the original recipe no doubt b/c the recipe is from a Mueller’s egg noodle package. This is a recipe from a book of ‘great recipes from package wrappers’ – which is sure a neat idea, though I’m sure not all of the recipes deserved to exist 😉 Anyway, we thank Mueller’s for the chicken/peach melba idea, but think it goes better over rice, which is good at absorbing the juices.
