Spaghetti with fresh tomato sauce; roasted asparagus with feta – 6 April 2012

D went to the Bowl today and found a 99 cent bag of “use me now” tomatoes, so he made a tomato sauce for tonight. This is based on a Georgeanne Brennan recipe, and includes garlic and onions, fresh tomatoes, and herbs. To this, D added sliced mushrooms and some thin-sliced hard sausage that I bought at The Pasta Shop a week or so ago, called Finocchiona (I think I got that right!). It was delicious! He also roasted up some asparagus, with olive oil, salt and pepper, and sprinkled French feta over the top, after a Gourmet recipe we have made many times. Also wonderful.

D also made a no-knead bread. I’m adding this on the 11th, so don’t remember for sure, but I think this one was 1/6 whole wheat, which is his usual recipe.

Our usual Friday wine made its appearance, and it was perfect for the meal: Cantina Zaccagnini Montepulciano d’Abruzzo 2008, which we get for less than $12 from Costco. Love it 🙂
