Asian veggies over rice noodles – 16 April 2012

D cooked a pile of veggies and served over rice noodles. Most delicious!

He steeped the rice noodles in hot water for a bit – perhaps not long enough, as they were on the chewy side, but not problematically so. The veggies included carrot strips, Thai basil, peanuts, peppers (Fresno?), cucumber, and probably cilantro. He made more Nuoc Cham, with lime this time, and poured it over the whole dish. It was great!

D made another loaf of no-knead bread today, though we needed only a tiny bit to swipe out our plates after dinner.

We had a new wine I found by accident at Trader Joe’s – an Epicuro I’d never seen before called “Vermentino” (2010) – and bought without noticing it was a white. Worked. Good wine, especially for $5.
