Spaghetti with cranberry beans, mushrooms, coppa, sugar snap peas, and parsley; broccoli – 20 September 2013

main130920D cooked a good pasta for Friday dinner. He cooked onions and mushrooms in olive oil, added some of the cranberry beans he made the other day, and some coppa from the freezer stash. He also tossed in some sugar snap peas at the end giving them about 3 minutes of cooking.It was really good, though I think the snap peas didn’t quite mesh

perfectly with the rest of the pasta; wine130920I thought perhaps putting the broccoli into the pasta and having snap peas on the side might have worked. However, the snap peas looked nice in the pasta., and were very good, so maybe I should rethink this. D boiled the broccoli, then drained it and added a bit of butter when serving.

We had another bit of the Acme Italian Batard, and a bottle of Brutocao Zinfandel (2008), a wonderful wine we were extremely lucky to find at Grocery Outlet a year or so ago.
