D invented another dinner to have with the apple condiment 🙂
He used one packet of chicken breasts from Costco, splitting them flatwise into more and thinner pieces. He sprinkled them with thyme from the garden, and salt and pepper, and later grilled them. He made a large batch of apple condiment, this time starting with about 2/3 of a medium red onion, chopped, and cooked in butter till soft, then adding something like 4-5 apples, in chunks. He added salt only this time, and cooked till the apples were soft. He also made some Thai jasmine rice. Great dinner – everything went really well with everything else. It was delicious!
We had a bottle of Vidal-Fleury Cotes du Rhone Viognier (from Wine Mine) in the fridge from when our family was visiting, and D thought it would be a good time to try it. We thought it was fine, but nothing terribly special (for $12.50).
In the afternoon, R came over, offering a sprig of grapes from his vine in exchange for some cooking apples. Ironic, as the apples are for my unbirthday cake. Nevertheless, D and I enjoyed the tiny muscat grapes!
